It was Friday and we wanted to have something easy and on the lighter side tonight. Paula wanted to eat some fish and I found this recipe for Tilapia Tostadas with Lime Crema in the April 2015 issue of Rachel Ray magazine.
First, you coat a baking sheet with cooking spray. On baking sheet, spray 3-4 tilapia fillets with cooking spray and then season with salt and pepper. Roast the fillets at 450 degrees until they are opaque in the center, about 8 to 10 minutes. In a food processor, blend 1/2 cup of cilantro, 1/3 cup sour cream, 1/2 jalapeno and 1 tablespoon of lime juice. In a bowl, toss 1 1/2 cups of shredded cabbage, 1 cup of grated/shredded carrots and 1/2 cup of thinly sliced red onion. Season and divide the cabbage mixture among tostada shells. Top with pieces of fish and lime crema. Enjoy!
