Theodore cooked a meal for the SECU Family House tonight. The SECU Family House is a facility for individuals to stay when they have a family member staying in the hospital.
He made my mother’s meatloaf recipe along with mashed potatoes and sauteed vegetables (green beans, zucchini, onions, red peppers.) We also made a vegetable meatloaf that I put together on Sunday. This creation was made with black beans, pinto beans, quinoa, parsley, spinach along with some broth and eggs to hold everything together. Everyone at the family house enjoyed the entire meal and it was a hit. One other thing… Paula made some chocolate chip cookies for dessert and they were also a hit. But everyone loves chocolate chip cookies!
