There was still an abundance of tomatoes at the farmers market this past weekend and so we decided to make Moroccan Gazpacho again. Paula and I decided that this would be a good way to help us keep summer hanging around just a little bit longer. This is such a delicious soup that it is hard to get tired of it. And it is so easy. Just blend fresh tomatoes, a red pepper, 1/2 of an onion, some chopped cilantro, a seeded cucumber, a large can of tomato puree in a food processor with a few pieces of softened bread. Then add the cumin, cinnamon, garam masala and salt until it tastes perfect and chill until you are ready to eat. We usually have the soup with some crackers or chips but you could enjoy it with a salad as well. If you haven’t tried it when I wrote it about in the past, I encourage you to do so before summer ends!
