Tonight we had Black Bean and Tomato Soup. This is an incredibly easy recipe that we have made a few times over the years. Paula made it on Tuesday when she was home from work. You only need a few ingredients: celery, onion, cans of black beans and diced tomatoes, some chicken broth, chili powder, minced garlic and cumin. The soup can be made in about 15 minutes and that includes cutting up the celery and onion as well as softening them in the stock pot. Another positive thing about this dish is that it travels easily. Paula was able to pack it up and bring it to school so the three of us could enjoy it together when Theodore finished his cross country practice.
