Paula made a Shepherd’s Pie for dinner tonight. She also made enough for Thursday. I cooked 2 pounds of ground beef on Saturday and the mashed potatoes on Sunday (when we were getting our dinner ready so she just had to put all the pieces together, cook it and bring it to school. It is one of our favorite comfort food meals. When Paula makes it, she takes the ground beef and adds a few cans of vegetables. It is usually peas and carrots, but this week she also added some leftover green beans.  Then she makes about 2 cups of beef broth and thickens it with some corn starch. She adds the meat and vegetable mixture to a 9×12 pan (or larger…) that has been sprayed with non-stick cooking spray. Finally she adds the mashed potatoes to the top and bakes the whole pan in the oven until it is cooked through.
