Paula made Mom’s meatloaf recipe on Sunday afternoon so we would have two easy meals this week since she is working 4 nights. That means that she will not have time to get anything ready so we prepared a few items ahead of time.

The meatloaf really hit the spot when Theodore and I got home from school tonight. The recipe is pretty easy. You take 1 pound ground beef, 1 medium onion chopped, 1 cup panko bread crumbs, 4 ounces tomato sauce, 1 egg and mix all of this together. Then you put it into a loaf pan and cook it at 350 degrees for about 45 minutes. Really easy and really tasty.

While it is good any time of the year, we usually make it more often in the winter. It has become one of our favorite comfort foods and every time that we make it, we are reminded of my mother. It is truly one of the treasures that she passed along to us. When we got home, Theodore cooked some macaroni and cheese and heated up a can of peas. All of it came together in a flash and we enjoyed a wonderful meal together. Thanks to Paula for taking the time to make the meatloaf for us and thanks to Theodore for putting the finishing touches on it by preparing the side dishes!
