Tonight we had some rotisserie chicken with some simple stuffing and roasted potatoes. I bought a rotisserie chicken on the way home from school. Paula cut up some vegetables that we roasted in the oven. I bought a parsnip and some carrots. We had some Yukon Gold potatoes and onions in the cupboard. She cut up all the vegetables, drizzled some olive oil over them and put them on a baking sheet in the oven for about 30 minutes at 425 degrees. I brought home the rotisserie chicken and we pulled it apart. Then we just made a box of Stove Top stuffing to really turn this into a simple meal.

Sometimes simple is good. That was the case tonight when I had to brew some beer with friends. This meal made for an easy preparation and clean up.
