Tonight we had lasagna for dinner. This is not something that we usually have for a weeknight dinner. Paula made the lasagna on Sunday when the two of us were making a few meals for the week. She used the basic lasagna recipe from her Better Homes and Garden cookbook. We had a big container of bolognese sauce that was not used at Christmas when we made pasticcio so Paula used that as the sauce base for the lasagna. We even had a box of opened lasagna noodles in the cupboard that had just enough noodles for one lasagna. I bought some ricotta cheese and grated Parmesan cheese at the grocery on the weekend and we already had some mozzarella in the freezer at home. It was really delicious, especially since the winter weather had arrived and it was really cold outside!
