Last week I found this recipe in the newspaper and it sounded pretty good – and easy. Paula agreed so we decided to cook it for dinner tonight. It turned out to be pretty good even though it required a few ingredients that we don’t usually use such as Alfredo sauce in a jar. Other than that, if you need a fast and easy meal, you may want to try this recipe.

Preheat oven to 375°F and spray a 2-quart casserole dish with nonstick cooking spray.

In a large bowl, combine 1 16 ounce jar of Alfredo sauce, 2 cups of chopped rotisserie chicken, 1-2 12-ounce packages of frozen vegetables, 1 1/2 cups of cooked rice and 1/2 teaspoon of ground pepper and stir gently. Spread the mixture in 2-quart baking dish. Combine 1/2 cup of grated Parmesan cheese and 1 cup of panko bread crumbs. Sprinkle on top of chicken mixture. Bake for 30 minutes or until bread crumbs begin to brown and chicken mixture is bubbling.
