All three of us were home from school yesterday so we were able to make a delicious meal together. Theodore made homemade macaroni and cheese. I think that this was the recipe that he uses at Radius. He cooked up some pasta. Then he brought some cream and milk to a boil and added shredded cheddar cheese to the liquid. Once all of that was blended, he added the macaroni and it was ready to eat.

We also ate some baked salmon. I put the salmon in the cast iron skillet and popped it in the oven at 400 degrees. While it started to cook, I mixed a few tablespoons of Dijon mustard, a teaspoon of white vinegar, a little dry thyme and a tablespoon of honey. I put this mixture on top of each piece of salmon and finished cooking the fish.

Paula cut up some kale and we sauteed the kale in a skillet with about a 1/2 cup of chicken broth until it wilted. Then it was ready to eat and so was everything else.

All three of us enjoyed a most pleasant meal together. It is not often that we are able to do that and so it was a treat.
