Paula picked out two simple recipes from Rachel Ray for dinner tonight. She was not working so dinner was not very rushed. All of us could enjoy the meal as a family.
The first part of the meal was “Haute Dogs”. We grilled up some chicke-apple sausages. Then we put them some hot dog buns in the oven and melted some cheese on the inside of the buns. Finally we topped them with some coleslaw and a little bit of thinly sliced red onion.
The side dish was Grilled Zucchini with Goat Cheese and Pine Nuts. I sliced two zucchini lengthwise, about 1/2-inch thick. Then I brushed the zucchini with a little olive oil and grilled them until they were tender, about 2 minutes per side. While they were cooking, we mixed 2 tablespoons of olive oil, 2 teaspoons of minced oregano, 1 clove of minced garlic, and 1/4 cup of crumbled goat cheese. When the zucchini was done, I topped the pieces with this mixture and added a few tablespoons of pine nuts on the top.
It worked well with the sausages. It also got us in the spirit of summer. We are back to using the grill. I have a feeling that we will be using it more and more in the coming weeks.
