Last night Paula and I went to dinner at our friends Ray and Sally’s house. It was an end of year party for our science department at Carrboro High School. Ray smoked some chickens and everyone else brought side dishes or desserts. Paula and I made a Cranberry-Almond Broccoli Salad that she found in Cooking Light. It was quite tasty – and very easy to make. This salad would go with anything, especially in the summer when you are doing a lot of grilling.

It is very easy to make. Here what you do…

Combine 1/3 cup of mayonnaise, 3 tablespoons of plain Greek yogurt, 1 tablespoon of cider vinegar, 1 tablespoon of honey, 1/4 teaspoon of salt and 1/4 teaspoon of ground black pepper. Stir well with a whisk. Stir in 1/2 cup of finely chopped red onion, 4 cups of chopped broccoli, 1/3 cup of slivered almonds, 1/33 cup dried cranberries and 4 slices of bacon that has been crumbled. Cover and chill 1 hour before serving. Enjoy!
