Theodore and I made pizza and watched “The Revenant” tonight. Actually, I was the only one that finished the movie. He fell asleep after an hour, which is typical these days. Anyway, I made a unique pizza that I read about in Rachel Ray magazine. It was Sausage, Radicchio and Ricotta Pizza.
Preheat a grill or grill pan over medium-high. Cook 2-3 sweet Italian sausages, turning often, until cooked through.Transfer to a cutting board.
Cut 1 small radicchio into 8 chunks. In a large bowl, toss the radicchio with 1 tbsp. oil and season with salt and pepper. Grill, turning occasionally, until charred in spots. Transfer to the cutting board. Slice the sausage and chop the radicchio.
Stretch the dough into a large oval; drizzle with 1 tablespoon of olive oil. Cook (or grill) until puffed and lightly charred, about 5 minutes.
Transfer the grilled dough to a cutting board; spread with 4 ounces of ricotta. Top with the radicchio, sausage and 2 tablespoons of chopped chives. Drizzle with some additional olive oil and slice into 8 pieces. Enjoy!
