Paula and I made a simple meal for the two of us tonight. If you read these blog posts lately, you may have noticed that our dinners are mostly for two people. Theodore doesn’t spend a lot of time at home these days so Paula and I just eat together. Anyway, tonight we made some fish tacos based on a recipe that I found in Cooking Light. It was a delicious and simple meal.

First, Paula made a tartar sauce type mixture by combining 3 tablespoons of mayonnaise and 2 tablespoons of pickle relish along with 1/4 teaspoon of black pepper and 1/4 teaspoon of kosher salt.

I prepared the fish, which were two tilapia filets by sprinkling them with some cumin, chile powder, salt and black pepper. Then I put the filets on a grill pan and cooked them on the grill for about 7 minutes, approximately 3-4 minutes on each side.

Paula warmed up some corn tortillas in the microwave and chopped up a small bunch of grape tomatoes as well as scooped out 1/2 of an avocado. Both of these were useda as toppings.

When the fish was done, we broke it up into small pieces and placed it in a small serving bowl. Then the two of us made our tacos – fish, sauce, tomato and avocado. We enjoyed it with a bottle of pinot grigio that we had laying around the house. It was a delicious meal!
