Tonight I made a simple meal for Paula and I. This dish is made in one cast-iron skillet and it has some tasty ingredients that make it worth trying. I found the recipe in Cooking Light. The original is called Bacon-Powered Sweet Potato Skillet.

Place 3 slices of bacon in a large cast-iron skillet over medium heat. Cook the bacon for 5 minutes or until the strip are just starting to crisp. Add 1/2 cup of diced onion and sauté for 3 minutes. Add 2 garlic garlic cloves and sauté for 1 minute. Add 2/3 cup of diced red or yellow bell pepper and sauté for 4 minutes. Add 1 cup (or more) of cubed sweet potato, 1/4 teaspoon of salt, 1/8 teaspoon of crushed red pepper, and 1/4 cup of chicken stock. Cover and cook for 9 minutes or until potatoes are tender. Add 4 ounces of fresh spinach and cook with the cover off until the spinach wilts. Sprinkle with some feta or goat cheese after serving.

This was really delicious! Best of all, it was easy to make. It took me less than 30 minutes to prepare and another 20 minutes for the ingredients, mostly the sweet potatoes, to cook in the skillet.
