Yesterday we had our monthly dinner group gathering. Several of our friends have become vegetarian over the years and so Paula and I try to make something that is meatless when it is our turn to cook the main dish. Paula found a recipe that fit the bill when she went looking on the web. It was really tasty and we would recommend it if you are looking for a vegetarian meal.

 

Combine 2 cups of cooked long grain rice, 1/2 cup grated Parmesan cheese, 1/4 cup mayonnaise, and 1/4 cup finely chopped onion. Press onto the bottom of an 11 x 14 inch pan. Set aside while you prepare the rest of the ingredients.

Cook 1 broccoli head and 1 cauliflower head into bite size pieces. Cook them in the microwave for a few minutes until they are tender. Cook 3-4 sliced carrots untuil they are crisp tender as well.

In a large saucepan, combine 1/2 cup of mayonnaise and 3 tablespoons of flour until smooth. Cook and stir until bubbly. Gradually add 1 cup of milk as well as salt and pepper to taste. Cook and stir over medium heat until the sauce becomes thick, which should take about 3 minutes. Stir in the broccoli, cauliflower, carrots and 1/2 cup of finely diced onion. Pour over the rice crust.

Top the vegetable mixture with tomato slices. Then sprinkle Parmesan cheese over the top of the tomato slices.

Bake, uncovered, at 350° for 30-40 minutes or until the tomato slices are roasted slightly. Let stand for 10 minutes before serving.

This was really easy to make. Paula and I made it in about 30 minutes late Sunday morning. It also traveled easy since we had cooked everything in one large pan.
