I made an easy meal for Paula and I tonight. It was Gnocchi with Peas, Tomato and Bacon. Besides being an easy meal, it was also quite fast to prepare. You end up cooking the gnocchi and peas in the same pan. Then you add them to a skillet with the bacon. and other ingredients…and in a few minutes you have dinner!

Here is all that you need:

  • 1 (16-ounce) pkg. gnocchi
  • 1 cup of frozen green peas
  • 2 bacon slices, chopped
  • 1/2 cup of chopped green onions
  • 2 minced garlic cloves
  • 1 cup halved grape tomatoes
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons grated Parmesan cheese

Bring a large saucepan filled with water to a boil over high heat. Add the gnocchi and peas. Cook for 2 to 3 minutes or until gnocchi float to the surface. Drain in a colander over a bowl, reserving 1/3 cup cooking liquid.

Cook the bacon in a large skillet over medium-high heat until crisp. Remove the bacon from pan with a slotted spoon. Add the onions and the garlic to the drippings in the pan and cook for 4 minutes, stirring occasionally. Add the tomatoes and cook for 5 minutes or until slightly broken down, stirring occasionally. Add the reserved 1/3 cup cooking liquid and cook for 2 minutes. Finally, add the gnocchi-pea mixture to the pan and toss to coat. Stir in the bacon and pepper. Sprinkle with the cheese.
