I had some extra ground beef in the refrigerator as well as some potatoes in the cupboard so Paula and I made this “hand pie” recipe for dinner tonight. It is incredibly simple, which is probably how it ended up in a recent issue of Rachael Ray’s magazine. All you need is the following:
- 1/2 lb. ground beef
- 1/2 cup frozen peas, thawed
- 1/2 small potato, grated
- 1/2 onion, grated
- 1 clove garlic, finely chopped
- 2 tbsp. plus 1/2 cup ketchup
- 2 puff pastry sheets, each cut into 4 squares
- 1 tsp. Worcestershire sauce
Cook the ground beef. Remove the fat and allow it to cool slightly. Mix the ground beef, peas, potato, onion and garlic in a large mixing bowl along with 2 tablespoons of the ketchup. Season with salt and pepper. Place the mixture in the center of pastry squares. Moisten the edges of the pastry with water and fold over to form rectangles. Seal the edges and slice four vents in top of each.
Bake at 425° until pastry is golden, 18 minutes. While the hand pies are cooking, whisk 1/2 cup of ketchup with the Worcestershire sauce to make a dip for the hand pies.
This recipe is so easy and it is probably something that would be good for a family with small kids…although Paula and I enjoyed it. I encourage you to give it a try…
