Paula and I leave for our first vacation in almost a year on Wednesday. We have begun to empty the refrigerator in anticipation of being away for two weeks. Tonight I pulled out a small meatloaf that was half of a meatloaf from back in May. We had some corn on the cob in the refrigerator and a couple of potatoes in the cupboard. It made for a tasty and easy meal. I cooked the meatloaf and the potatoes at the same time so there was little prep. It only took a few minutes to cook the corn when the meatloaf was finished.

My mother’s meatloaf is always good. It doesn’t matter when we eat it. The meatloaf tasted good with the potatoes and corn…and we used up some more food that is in the house so that it won’t go bad.
